Har gow: a Chinatown ordering guide

What is it?

Har gow are steamed dumplings usually associated with a translucent wrapper and shrimp filling. Their shape and delicate exterior make them easy to recognize, but the exact filling and recipe still belong to the kitchen preparing them. Ask directly if ingredients matter to your order.

How it fits into a meal

Look for a contrasting companion, such as an open-topped siu mai or a bun, rather than ordering only dumplings with similar wrappers. Ask how many pieces come in a portion before dividing the order across a group. A small basket can be part of a larger lunch or one selection in a takeaway meal.

At the table or on the go

Steamed wrappers are best approached gently. Use the utensils provided and avoid leaving the basket untouched while you photograph the entire table.
